As producer says: After fermentation for around 200 hours in stainless steel tanks, our fermented agave is transferred to our 400-liter copper still. The distillation is approximately 4 hours. The distillation core has an alcohol content of approximately 76°. We then lower this volume with mineral water to arrive at a final degree of 43°. Neither a Tequila nor a Mezcal, this spirit focuses on the identity of agave and its freshness, its minerality. The usual aromas of smoke and damp earth are replaced here by citrus fruits, flowers, salty notes. The finish is fresh, straight and mineral.
